I’ve lived this also. I was unemployed during cancer treatments but arguing with my insurance company was a full time job.

I have a different recipe but always shred the cheese. The bagged stuff is dried out on arrival. Had to make a version of each to prove it to my partner. Suffice to say he preferred one but still finished the other one.
