Here’s my panettone crumb. So pleased with my second attempt at a sourdough panettone. So tender and delicious. Making the candied orange peel was so worth it as it has much more flavor than store bought. I love them together with the tart cherries and sultanas. www.thefreshloaf.com/node/74988/p...

I baked this sourdough panettone yesterday. This is my second time baking panettone which is considered along with baguettes to be the most challenging of breads to make especially for home bakers. I candied orange peels and used sultanas and dried tart cherries.

Cinnamon Chinese Five Spice Spelt Sourdough Rolls with Miso Cream Cheese Frosting. I like making the flavour a bit more complex so added the Chinese 5 spice and miso to the filling. Whole spelt to give these more wholegrain goodness. www.thefreshloaf.com/node/74891/c...

Purple sweet potato sourdough milk rolls. I made a stiff sweet levain to reduce sour tang. Adding enough sugar to the levain, in this case 69% of the water will dehydrate the LAB more than the yeast. This reduces the LAB population and thus the bread you make will be much less tangy.

The crumb of my Triple Sesame Spelt Honey Sourdough sandwich bread. Lovely and fairly open for a pan loaf. This has a lovely nutty sesame flavour from the toasted sesame oil and black and golden sesame seeds. I used a sprouted whole spelt flour at 20%. www.thefreshloaf.com/node/74814/t...

I made smoked salmon dill sour cream cucumber Dutch babies two night in a row for dinner. They are quite delicious.
