Do you know if the number of visits has increased since covid? Have there been any periods of time when the numbers went down? If it's a constant increase for 5 years, that means "somebody" isn't paying attention.

I haven't tried quilt as you go, but I have quilted small pieces with my walking foot. The book "Walk" has some very cool patterns. I also have used a quilt shop with a long arm machine for a large project. I guess I'll have to try quilt as you go one of these days!
