In City Trial I think it's random since you can't choose your machine directly but just yesterday I was playing offline locally with my boyfriend and I noticed he was riding one of my customs so it's possible.

I have been able to select machines I bought in offline games as well, in any mode, the same way you'd select one of your own custom machines. On any machine select screen, put the cursor over a machine you have made/bought a custom variant of, press X and select it.
