Sorry it's not a more colorful meal (I forgot to take pics of the peanut Thai curry yesterday), but this batch of stroganoff came out fantastic today.
My roommate has a strong dislike of mushrooms, so I cooked those on the side just for me.

Did some good food prep this weekend so I have meals for the upcoming 60-hour work week.
Made some currywurst inspired risotto, and a sweet-n-spicy vinegar slaw for fast meals or ready sides.
