There are 2 kinds - this one looks like Hachiya, which must be fully soft to eat (otherwise the tannins will make your mouth pucker). Fuyu looks like an orange tomato and remains hard but gradually gets more orange. It can be sliced into wedges and eaten as a sugary treat.

I squash them through a colander and use the goo in quick bread. It caramelizes so nicely and makes a great baked good.
