Just understanding the relationship been sets and mappings/ actions—and the formalization of mappings more generally. It also shows up in high level math anywhere you turn.

A measure theory course is going to be super useful in the long term (it might show up at the tail end of RA—it’ll be everywhere afterwards) often taught in graduate prob/math stats classes.

Otherwise, the main thing I see missing from your list is algebra. It’s super cool and super fundamental!

Here’s the syllabi from Northeastern University that I took. It’s split into a pre and post co-op section (6 month required internship).

I think it’s decent at prepping for career (just forcing people to write resumes and do mock interviews is so important). Lacks a bit for academia track.
