Ah. Well, most haven't hit mainstream awareness, but there are certainly some successful titles, each with their own dedicated fan bases. I like "The Wandering Inn", "Dungeon Crawler Carl", and "Mimic and Me".

Like most genres it covers a wide spectrum, while they all have a fantasy/sci-fi element to them, they can be comedic, dramatic, romantic, etc. If you're looking for some recommendation, may we ask what are some books you already like? There's probably a suitable LitRPG in the same vein.
