The villages and countryside around the Fluessen are beautiful and a visit if the weather is good, but it might push you off track too far.

The Afsluitdijk is a wonderful feat of engineering but can be a slog if it’s windy and wet. I think you can skip Noord Holland if you do Zeeland and Friesland.

I would skip Enschede and stay in the surrounding countryside. The area around Odoorn is pretty. Not to add to your trip length but the coastal route along the South of Friesland is prettier than going along the main route. I would avoid the Afsluitdijk. Its impressive but long windy and straight.
