I have some Hue lights and a bunch of lights from other brands too and control them all in the Apple Home app. If you're an Android user, I assume there's an equivalent, but yeah, I don't like that Hue app either.

I use a HomeKit Secure Video setup w/ my Mac/iPhone. Footage is encrypted and Apple can't see it. If you don't login to the camera manufacturer's app, they shouldn't be able to see it either, but I guess that's less guaranteed. And you can mix and match manufacturers.

I love old shit. I have a room full of old shit. I received a subscription box of weird old shit in the mail a few days ago. Nostalgia is fun.
