Poultry and pork updates. Wings need about 25-30 minutes to crisp up. Tenderloins are done, will be shredded for sandwiches. Ribs have an hour left. Shoulder should be ready by UM-OU night kick.

It’s also sauce day because the San Marzanos from the garden are starting to get ripe. Sauce day #1 of many. Boil the skins off, make a base, add tomatoes. Just like Clemenza taught us.
