They also expect passengers to self police in behaving and not doing stupid things to endanger the aircraft - like trying to open the door in flight. We occasionally see press reports that some idiot has tried🤷🏼‍♂️

Almost certainly - but a mobile phone in an aircraft is moving so fast it is outside the design limits for cell<->cell handover - much more likely to get dropped calls.
And has been pointed out already your phone battery will go flat quickly as you so far from the cell towers

WiFi is low power/short range. The cellular connection is higher power/can travel miles. A lot of avionics designs go back a long way, so weren’t designed/ tested to withstand mobile signals… they might, but no one was sure.
Also modern mobile networks use lower powers than the earliest generation

While I agree, it is reasonable to pose the question “And if a future system *did* achieve sentience,
A) would its creators detect it?
B) would they tell us?
C) what protections could/would we give it?”

Unfortunately, we have seen with 5G protests, anti-vaccine movements etc technology will be destroyed/discarded.
This will include data centres society depends on - not just those specifically for AI.
