Frying the whole turkey started as a Cajun thing. It allows for a highly spiced bird that can seal in all the flavor and maintain a crispy skin without battering. It is also very fast compared to regular roasting or smoking. A room temp 12–14-lb. bird should take 40–50 minutes to reach 165°F.

I have seen it done. They used to do it at the grad student Thanksgiving for the UT Chemistry department so there would be enough Turkey for everyone. Of course, it was warm enough that they could do it in the courtyard, and the inorganic chemists were in charge. It is delicious.
