PS - Also you are a wonderful spouse to try these kinds of things. I literally cried when my friend made a GF cheesecake for me. Homemade goodies are one of the things I miss the most with GF.

This looks delicious! If you're looking for more recipes, try the Loopy Whisk. She's the best for GF baking - my family and friends are shocked when I tell them it's GF. Most recipes need to be modified to accommodate the lack of structure from gluten, which is why you get dense/dry.

There are lots of free or low cost resources I'd exhaust first. I love Alyssa Matesic (great YouTube and blogs) and the Shit No One Tells You About writing podcast. They have a $20 beta reader match up I have used to great success. IMO $4K is a lot for one person's opinion on a first draft.
