Like Clairvie says, depends on the type. Both very rich. The squat type (fuyu is the most common) is eaten like an apple when crisp or can ripen a bit more. The long one (hachiya, common cultivar) has to ripen to the point of almost overripe. Sorta banana texture. Tastes horrible before that.
