You can leave it. I used to switch mine on before I went to work. Coming home to the lovely smell was bliss. A whole chicken or a joint of meat cooks beautifully too.

My MIL went to a day hospice. She ate a lot of cake and drank a fair bit of gin and tonic. The staff were lovely. They'd say "Have another, Jean. What harm could it do?" She spent her final fortnight in a hospice and I've never seen such devoted care. Dignified and pain free.
