Haha, if you buy some pastry roll sheets, all you have to do then is mix grated pumpkin with cinnamon, sugar, some biscuity/breadcrumby crumbs to soak up the moisture and nuts if you like them. Then sandwich the mix between two sheets and cook in the oven for 20-40 minutes depending on your oven ☺️

You can also use the seeds and roast them with a little oil and salt and they are a great snack.
