Aren't the sheets gonna flop all around? What about something with larger fins, like this (but narrower spaces)? Although if the spaces are too narrow you wouldn't be able to reach in.

Yesterday I made the Praisesong Biscuits out of Crystal Wilkinson's (@crystalwilki.bsky.social) Praisesong for the Kitchen Ghosts and they were glorious. My son called them perfect. My go-to recipe from now on. (I got impatient and pulled them out of the oven before they were golden - next time!)
