Ok, this is really cool.

The clouds in the first photo cleared up and now I can see the Northern Lights all the way down here in central Kentucky.

I swapped the tray order at 3 hrs. And the potatoes are done at 6 hrs. I gotta say, this Nesco brand 5-tray dehydrator was pretty quiet and worked as expected. The big test will be the beef jerky (tomorrow maybe??)

The trays are put on the dehydrator base, covered. Temperature is set to 140F and time is set to 6 hrs.

Now we wait.

The potato slices are parboiled in lightly salted boiling water. Using a spider, slices are removed and placed on the dehydrator trays. Careful!! They’re hot!

Potato prep process. I scrubbed 6 medium potatoes, then sliced into 3mm slices using food processor.

I really want to find a pattern for this item (or similar) so I can turn it into a pin cushion that sits on sewing machine. While this item is crocheted, I think that one made of felt would be a better fit for my intended use.

Of course, I might be able to thrift some toy-bits to use instead.

Dinner tonight was a tasty pork chop with port reduction sauce and roasted delicata squash.

Sometimes the simplest meals are the most satisfying. If you have the chance to get some of this vegetable (in season right now) get some!

Looks like the sausage was a success. These are ready to use for breakfast burritos, pasta bakes, or whatever. Shelf stable up to 2 years with proper storage.

We were planning on baking zucchini bread with chocolate chips today and, on a silly whim, we picked up some Halloween-themed cakelet pans at Aldi this morning. I think these came out absolutely adorable!
