i like to do my grains joshua mcfadden's way instead of boiling in plain water:
a recipe from Joshua McFadden's SIX SEASONS titled "Farro." Yield: About 2 c. Ingredients: EVOO 2 garlic cloves, smashed and peeled ½ tsp. chili flakes 1 c. farro 4 c. water 1 bay leaf 2 tsp. kosher salt Method: Heat a couple tbsp. EVOO in large skillet with lid over med. heat. Add garlic and chili flakes and toast slowly until soft, fragrant, and golden brown, ~3 mins. Add farro and stir constantly to toast until fragrant, 3–5 mins. (or longer, as desired, for nuttier flavor) Add water, bay leaf, and salt and bring to boil. Cover and reduce heat to simmer, 15 to 30 minutes, until farro has softened but grains haven't "exploded." Drain and use warm. Toss with more olive oil and allow to cook if using cold.
