I have spatchcocked my turkey for the last decade or so. The time I got a 25 pound bird I was completely exhausted by the process.

I had to have my 5’11” Middlest flatten the breast. Those large birds are beasts to deal with.

We generally only send the legs and thighs into the oven. The breast goes on the smoker.

I'm blessed with an upright freezer, so I pick up a couple of the smallest turkeys I can find after the holidays. We like the breast on the smoker, the legs and thighs braised.

If it helps you be brave, a turkey in a way is *easier* to spatchcock! Especially if you go with the smallest turkey you can find, like 10-12 pounds.

The parts are easier to see, and if you can get enough leverage on the breast bone it cracks flat just fine.

It's been nearly two decades, and I have zero regrets.

And it paid dividends. Eldest and Middlest won't make it home this year for the first time, but live ~3.5 hours from each other. Eldest and Partner are *deep cleaning* their apartment so Middlest can come for the holiday worry free.

Eldest's partner is a HS Art teacher. Subbing and paying income tax in PA is *way* better than a full time teaching job in AL. Because PA pays way more and has no tax on groceries or clothing.

(PA is purple-ish but they live in a solid blue area.)

I developed a severe reaction to even trace amounts of gluten in my mid thirties. Two of my spawn react as well.

Thanksgiving is at my place, and I have 100% control of all food. No exceptions.

I spent YEARS being told my migraines are not migraines because I didn’t fit the “profile” of a migraine.

Now they are a specific type of atypical migraine. But THAT DOES NOT MEAN THEY WERE NOT MIGRAINES before science caught up with reality.
