Loving my vegan cooking exploration. This is "breakfast" enchiladas. Not pretty, but was delicious. We just used up everything we could, layered it with corn tortillas, "cheeze" and some black bean dip, squash, and tofu scramble. Calamata olives on top just for S&G.
