Good save! I run a duel setup timer and thermometer because it's not usual for me to forget one or the other. Timer to get me roughly to the right spot within 10-15 minutes, and a leave-in thermometer to really really let me know when the bread is done. I can't recommend one enough.

No need to restart, but Starters need regular maintenance. In short, pour out a whole bunch of the starter, then mix in equal parts flour and water with the remaining starter. Check out the guide here www.theperfectloaf.com/sourdough-st...

The separation at the top is largely alcohol from the yeast and bacteria doing it's thing. It's called hooch. It's a sign that your starter is hungry! You can mix it back in to maintain a more tart flavor, or pour it off for a lighter flavor. Just feed/refresh your starter well before you see that.
