I find it helps to know in advance when I will be working during a holiday and when I will be properly on holiday. I let my staff know the weeks I am available and the weeks when I should only be contacted in an emergency.

There are things you can do, of course, to get ahead (SIP/SEF/other documents) and you may choose to set aside time in the holiday to do those things. But being a head isn’t like being a teacher with a classroom to prepare (displays, MTPs etc) and I think it helps to remember that.

Looking after your school community, managing illness and absence, dealing with grumbles and complaints and worrying about staff, pupils and parents (who may all share their worries and concerns with you) all need energy, headspace and patience. You prepare for that by being well rested.

First and foremost, make sure you get a proper break, as I’m sure you have encouraged your staff to do.
Secondly, please bear in mind that there are many aspects of your role that you cannot prepare for in advance - apart from by having a proper break and being refreshed when you return.
