Salmon - smoked with apple wood. Chicken - roasted with tarragon, thyme, white wine, lemon. That's nearly the last of the Xmas food prep. Just a red currant tart to go 🍽️

I tried Matsutake (Tricholoma matsutake) for the first time. It was delicious, reminded me of garlic scapes or pikopiko. Wonderful texture too
Tricholoma matsutake or pine mushroom on a cutting board. One sliced lengthwise mushroom is flanked by two intact mushrooms. The Matsutake mushroom is also a cross cultural dick joke.
