This excellent potato pancake recipe is from an old magazine.

I make these using tinned potatoes, I’m not sure if that’s why they turn out so well? Tinned potatoes are small but firmer and easier to grate than home cooked potatoes, (Woolworths home brand are good).

The text of the recipe is included on the bottom of the page, it reads: 1 cup self raising flour. 1 egg. 1 and a half cups milk. 400g potatoes cooked & grated. 2 bacon rashers chopped & cooked or sliced smoked salmon. 1 cup tasty cheese grated. Quarter cup spring onions sliced. Seasoning. Butter for frying. Sour cream for serving. In a bowl whisk an egg into the flour slowly incorporating the milk until a smooth batter has formed. Fold through the cooked grated potato, cheese, bacon/smoked salmon and spring onions. Add seasoning to taste. Heat a heavy based frying pan with a tablespoon of butter. Add spoonfuls of potato batter to the frypan, cook for four minutes, turn the pancake with an egg flip and cook for a further four minutes. Serve with a dollop of sour cream on top. In this recipe we have used precooked potatoes from the supermarket.

Saw this recently and loved it, my photos don’t do it justice, it was really spectacular. This is two sides of the same silo.

We finally made it over your way recently. Loved it.
The wind and the smell of the ocean was so strong, it was magic, the dog loved it so much she was howling at the sea.

‘A House For Everyone’ is a picture book about a group of gender diverse friends which helps children understand gender identity using simple language and an engaging story. It’s a popular book.

Recommended for 4-8 year olds.

‘In My Daddy’s Belly’ is a picture book about a baby being born into a loving family and community.

Lots of colourful pictures and a simple, heartwarming story of two Dads eagerly awaiting the birth of their first child.

‘Jamie’ is an uplifting story about an 11 year old non-binary person, and their experiences at school, home, etc. It’s a story about friendship, bravery and acceptance.

Highly recommended by my trans kid, they loved this book.

Hard to believe I bought this hat last week, have worn it twice, and no one has said ‘omg I love your hat’.
