Understood. I’ll put something together for you. Big picture: for 50 years Ag was primarily concerned with production yield. It was successful but this had significant costs to diversity, environment, and here, to net nutrient quality/density.

Some data here is based on dry weight. Increased net yield can help to offset some of the nutrient dilution, but again, who is going to eat 10 servings of vegetables per day.

Nutrient yield per acre is down. And you can’t expect Americans to eat more fruits and vegetables to make up the difference. They’re not even hitting the current targets.

Quality vs Quantity. I wrote a position paper on this subject last year. One key finding is the lower nutrient composition of crops produced using modern agricultural practices. Looking at yield/quantity misses a big part of the picture (quality). See what happens when harvesting before ripeness...
