It always baffles me how people stop eating meat because of the animals, but continue eating dairy and eggs, in the production of which animals suffer (more) and are eventually killed, too.

No, not 40% of the food but 40% of the options – i.e. if most people choose the 60% of meat-based options, then very little of the food overall will be vegetarian (let alone vegan).
