Spectacular! My mom's recipe uses white corn syrup instead of maple - but the KEY is to whip until frothy before scooping into the cups - makes the thin crust of light sugar across the top as it bubbles up. Trying the Sortiliege myself next time.

These are all great, but the 4th one should have been the Fairmont Spa at the Banff Springs Hotel - the most spectacular. Complement the waters with the Wildflower Body Polish, and you are in Nirvana.
