This year's entry was brilliant though, by polished performers who can actually sign and harmonise. The only way we will win is by having all songs performed anonymously and a blind vote.

To give an actual answer. During the performance they simply keep time. During the rehearsals, they shape the performance to be exactly as they want it, extracting nuances from instrumentalists. They can be brutal to work under!

Professional musicians do a significant amount of personal practice to ensure they get it right. Wrong notes in an orchestra are VERY noticeable. It's soundtracks where it is done over and over and spliced into the 'perfect' take!
