Then the real question is how to include pqc in a meaningful way with the time constraints of a general introductory crypto course.

I agree. Recently, I find no practical reason to spend much time on RSA (perhaps just to see an example of trapdoor permutations). Instead, DH and DL primitives seem easy to explain and from them jumping to EC is a good option.
