I find it funny that older cookbooks always have this "top milk" everyso often. "Top milk" referred to the upper layer of milk in the bottle, which contained more cream than the milk below. It is quite literally what we call Half-and-half now.

There is such a thing as butter cheese. It's called Butterkäse, it's cheese made by fermenting butter instead of milk. It's really good.
