Also, many of the different fields of science are less than a century old, and basically 99% of all scientific research has occured in the last 50 years or so. New data, evolving theories, and emergent treatment methods is both natural and to be expected!

This is simply untrue. There is countless research testing different theories about human behavior. Might be worth looking into a history of Psychology class if you're interested!

As to your second question, the answer lies more in the evolution of technology and society, imo.

I'm not sure your book is doing justice to the 70+ years of scientific research done in that field... that said, nearly all scientific research starts with some kind of assumption or theory, then either tests for it or builds off it.
