Overall I think it's a reasonable upgrade. I wish I had a pair of the AirPods Pro MAX to try out against these. I would be tempting to skip the AP3 upgrade and just get the Max for use on planes or at other times, but it's twice the price for maybe not a worthwhile upgrade? I don't know.

Playing lawnmower noise over my klipsch speakers, there is a difference in the ANC, but I don't think it's that big of a deal. The AP3 reduces the sound some vs the AP2, but it's not like it's gone. I'm sure it'll help on flights where a podcast/audiobook is quieter and the plane is very loud.
