So… This is what happens my wild ale brewing friends, when you try to make concessions with hops heads; just to collect some remnants of the harvest for your cheese-hop bucket. You get served a half ass Randall’d Kölsch.

So… This is what happens my wild ale brewing friends, when you try to make concessions with hops heads; just to collect some remnants of the harvest for your cheese-hop bucket. You get served a half ass Randall’d Kölsch.
9-months later: Our Woodsong 10% imp. stout, racked out of a freshly dumped Rye Whiskey barrel, now 14.6%. 12-gal., heavy char bits settling out. Soon to be blended w/ a lower ABV portion back down to a more approachable 9-10%; adding back some mouthfeel, hop presence, w/ chicory & blueberries.

A photo referencing potential energy; can’t wait to find out what some Brettanomyces bruxellensis does with this Spelt grain. Brewing a Farmhouse Ale that’s going into a 15-gallon Gin barrel, but shall have to wait a year or so to pop a cork. Cellaring is brewing.
