I think it would have to be in the Ozarks area. I'm from the KC area originally, and there's nothing that looks much like what was shown in the episode unless you head that direction (SE into southern Missouri). Even then, it's more deciduous than conifer forest.

There's decent accessibility: large font subtitles tagged with the speaker, good contrast for text, all dialogue is voiced, can change the game/day speed and remove timed events, multiple movement inputs accepted. Nighttime isn't super dark. But there isn't any contrast slider as I recall.

If you like cozy/farming sims, Wylde Flowers is one I'd recommend. Story is very solid, but you play as one specific character (Tara Wylde), which some may find off-putting. Lots of likeable NPCs w good voice acting, so checking in with NPCs doesn't feel like a boring grind like some farm sims.

Shadowhunters might be a good one. Similar themes (family, good vs evil, identity, evolution of self) to SPN, decent queer representation, solid casting and acting quality, and visually quite well shot from my non-professional opinion. Also not a huge time investment, as there were only 3 seasons.

Loop Hero might be a good one. It's been a while since I played, but I remember it as having very minimal inputs (placing cards/tiles along the loop is about it), but a decent amount of complexity in the gameplay loop to keep it fun.
