no knead, 24h warm fermented, coarsely ground grains, fennel caraway coriander seeds, large pullman tin, 1h+ bake & nice aroma in the kitchen, internal temp 95c, 10min out of pan crisping

2/3 will go to friends

The week finished late with a small batch of Papo Seco, Rosetta Romana rolls. 🥖
As a plain snack, with ham and mustard, they disappeared fast.

Bifanas, maybe. Later.

First, papo secos fresh from the oven & sun is warm as if in Lisboa. Cold beer.

Tinkered a bit w/ dough - autolyse, added sourdough, different shaping technics (half moon) and bigger rolls (115gr). However not worth the effort.

Will revert to my standard recipe.

Papo Seco day.

Low effort, so easy to make.

No Bifana this time - these Portuguese rolls wait to be eaten as a simple ham, cheese and mustard sandwich, some with bacon and red mojo - all paired with cold evening beer.

Whole rye & spelt flour, sourdough, salt, honey, fennel, koriander, caraway seeds. Only rudimentary mixing, 24h cold fermentation

Whole Rye Sour

A hack, if you forgot to double the dough, but hate small bread slices.

Just fill in the dough and half the toast form with jar & parchment paper.

Now, I just need a trick to half the week 😃...
