I have a 1960's house with built in place cabinets and a countertop with a laminate sheet on it. It's peeling up so we want to replace it. Would you recommend a new 12ft laminate countertop or peel off the old sheet and put on a new one?

I want a new countertop but don't want to go through the process of picking out a new one. We have an L shaped counter that is 10ft long & 6ft long. The common lengths are those but if I want the integrated backsplash it needs to be 12ft..
