birthday cake for my friend. super happy w/ the light and fluffy texture, peach topping gave just the right amount of kick and texture. the honey flavor is so delicate, easily one of my fav creations

matcha orange blossom cake -> matcha + orange blossom olive oil cake, cardamom cream cheese frosting

surprisingly difficult cake to get right! unsure if its just the nature of olive oil cakes but texture was denser/chewier than i wouldve liked, even when i whipped the eggs up + used a raising agent

pistachio rose cream puffs -> pistachio praline, rose water, and cardamom creme mousseline, brown sugar craquelin topping

i had to remake this recipe twice in a day. choux shells collapsed and custard separated on first try. second time was fire just need to adjust pistachio/rose flavor balance

cranberry almond tarte first attempt -> cranberry curd, almond frangipane, spiced crumble, orange blossom whipped cream

need to fix the ratio of curd to frangipane, desperately need to figure out how to make proper shortcrust pastry bc this was ass
