I winged it, so I did my best to type up what I did! Sorry, it's not very professional. Some measurements are missing, and I didn't include recipe for tart cases (you can make or buy), but hopefully this helps give you an idea!
Ingredients Pistachio layer • 100ml double cream • Pistachio cream (I did not measure oops) o (I used a store bought “pistachio cream” which had a thick butter-like consistency, but you can also use other kind of pistachio butter, or pistachio paste, either storebought or homemade) (looking up recipe for a pistachio ganache/tart layer might yield more professional recipe) Chocolate layer • 100ml double cream • 150g dark chocolate, chopped into small pieces Decorations • White chocolate (I did not measure oops) • Pistachios, ground/crushed using a blender into a powder Method 1. Prepping the decorations a. Using a bain-marie, gently melt the white chocolate, and slowly mix in pistachio powder. You can do this based on taste/colour, to your desired effect. (You could microwave instead but white chocolate seizes very easily when heated this way, we love a bain-marie) b. Remove from the stove, and pour into ice cube tray/chocolate mold. Place in the freezer. I left mine overnight 2. For the pistachio layer a. In a saucepan bring double cream to a low boil. Remove from the heat and gradually swirl pistachio cream until melted and fully combined. If your pistachio cream isn’t as sweet as you like (mine sure was) add some vanilla extract b. Pour into the tart case and leave until cool. Once cool, put in the fridge for 1-2+ hours to set 3. For the chocolate layer a. In a saucepan bring the double cream to a low boil. Remove from the heat and gradually swirl in the chocolate until melted and fully combined. b. Pour the chocolate layer on top of the set pistachio layer. Once cool, put in the fridge for 1-2+ hours to fully set 4. I removed the tarts from the fridge, sprinkled some pistachio powder on top, and placed a chocolate on each. Keep in fridge
