I must be firmly ensconced in a bubble because everywhere I look are developers and manufacturers pushing AI this or that, both in features and crass labeling, but haven't ever had an interaction with a fellow consumer who seemed to genuinely want it, let alone make purchasing decisions based on it.

This is so close to the truth but misses the mark. They're not clinging to their way of life, they're clinging to the fantasy of how they imagined life to have been before. They're not "stupid" in the sense of unable to process ideas, but they're happily deluded about the world.
