I was diagnosed celiac after a biopsy years ago. Too much gluten can be surprisingly hard on the central nervous system.
Many in Gaza with celiac disease, like 9-year-old Anas, were forced to eat gluten given the limited food aid that has entered Gaza under the siege. “I spent 20 days in the hospital — unable to walk, with pain in my neck and back. I lost my teeth. I lost weight fast.”

What little food aid that trickles in isn’t edible for some, particularly children and those with special dietary needs.
