Sunday dinner. We've gone back to the Rotisserie, with a @smokeycarter.bsky.social Texas Ranch flavoured chicken cooked on the SNS Kamado with a chunk of cherry wood.

Using up left overs.

Chips with Bacon Dust, cheese sauce, @smokeycarter.bsky.social Lemon SPG fried chicken, South Carolina rubbed Pulled Pork from New Year, mayo, tater tots and Coney Hot Sauce.

Fried chicken time. We made a coating following Kenjis crispy chicken method and added @smokeycarter.bsky.social Lemon SPG rub for flavour. It's a great combo.

Then added a hash brown, two onion rings, cheese and lettuce

Spent the day in Cambridge. It still sucks and the people are awful there. Went to Popeye's for the first time, I was impressed for fast food. Very crispy chicken

We made @jameshoffmann.bsky.social Tiramisu for Christmas and it was one of the finest we've had. Really gets the coffee level spot on.

We had prime rib of beef for Christmas this year.

I'm still not a fan of it 🤣

We're having beef as our main this year, but wanted to have some turkey too.

Jointed a whole bird and removed the breasts which are now dry brining and air drying in the fridge.

Then tomorrow night we'll pan fry them, add some butter and rub, then sous vide them overnight.

Comfort food before the big day.

Full English Jacket Potato

Cooked on the Weber GoAnywhere using the Smokerig.co.uk 100mm riser, their deflector plate and a Petromax loaf shaped Dutch oven to ramp up the cooking.

Then seasoned, lashing of butter, sausage, homemade jerk bacon, cheese and beans.

Annual full strip down service of our Gaggia with Gagguino mod.

All bolts switched for new .304 stainless steel with copper grease added to the threads. All o-rings replaced and lubed up with silicone grease. Scale wasn't bad at all. Upgraded the portafilter gasket for a new silicone version.

Cooked up a BBQ/Thermomix curry this evening

We loosely followed the Butter Chicken Guided cook, but instead of marinading the chicken in the Tikka paste, we marinated it in @smokeycarter.bsky.social Spice Mango and Lime and BBQ'd it, adding it to the Thermomix for the final 5 minutes of cooking.
