Tried this meal from Purple Carrot and it was pretty tasty! 🍝 The microwave time makes the orzo al dente and the plant-based unmeatballs are Gardein brand. A touch salty to me but most all convenience meals are. Would buy again. 🍝 #Vegan #VeganFood #Veganuary2026 #Veganuary #Gardein #PurpleCarrot

Made a parsnip pureé with #Parsnips that I had par-boiled then roasted a bit in the oven. Took them and blended in the Vitamix, added soy milk. Finished by cooking in a soup pot with some sauteéd shallots. Topped with some crispy seitan "bac-UN". Yum!! #Vegan #VeganFood #Seitan #VeggiesRock !!

Thought I would try #Sunchokes 🌻Roasted @425F for about 20" & wow!! They are soooo good! 🌻Tried not to eat too many because internet said they were very fibrous. Raw, they cut like jicama. Then roasted, taste like a creamy white potato with sweet notes that melt in your mouth! #Vegan #VeganFood 🌻

Made a #VeggieWrap 🌯 using some #Tortillas that I found at #NaturalGrocers with pretty clean ingredients!! Roasted some carrots and added artichoke hearts, onion, olives, chickpeas, avocado and other veggies I needed to use up. Super yummy!! 🌯 #Vegan #VeganFood #VeganMealPrep #VeggiesRock !!! 🌯

I found some Chestnuts 🌰 to try roasting in the oven. I've never roasted them before so I found instructions to roast at 425F for 25-30 minutes. I think my oven was too hot so next time I will lower that a bit. 🌰 Yummy and fun!🌰 #Vegan #VeganFood #VeganTreats #Holiday #Chestnuts 🌰 #VeggiesRock !

Found Spring Rolls w/Tofu @ Trader Joe's. Had never seen them before so we tried them! Pretty good & cashew sauce was good too.
