Okay apparently I have to clarify this because people forgot,(I guess it was back on twitter) but the lighting property damage I am talking about happened back in May of 2023.
I am fine right now, I was just lamenting the loss of my very nice scanner that was a gift to me and I never replaced.

I wish my place didn't get hit by lightning and blow up my scanner (among other very expensive things) because my hatred of AI is making me wanna get back doing traditional sketches

Despite my spatchcock evangelism I did not do so on this year's bird because I only have one and I wanted to smoke it but my smoker wouldn't fit something that wide.
Turned out great, monitoring temp is important regardless of method or shape of the bird and don't forget about carry-over cooking.

I do mean it tho, buy a non frozen turkey from the store right now, spatchcock it, season it all over then throw it in the center rack of your oven on your biggest baking sheet at 450F for an hour or until an instant read has the thighs at 155F in the center, rest it 20 minutes. Turkey in <2 hours.
