If you're having issues with seeing Google's AI Mode on mobile (like I was), enable the desktop version of the site in your browser settings and the AI Mode tab should appear in the top left of search.

Google is now adding an export option at the bottom of AI Overviews. Users can copy the AIO text to their clipboard, draft an email, and create a Google Doc. Citations from the AIO are carried over in the exports. Second pic is an AIO exported via Google Docs.
