Chewing behavior and bolus particle size of rice influence carbohydrate digestion and gut microbiome metabolism in vitro
The size of ingested bolus particles and their surface area affect how accessible the substrates are to digestive enzymes and the gut microbiota. This…

Our new research reveals how the colonic metabolism of flavan-3-ols (found in apples & more!) varies depending on food source & gut region. Our study using in vitro models maps key metabolites, uncovering the complex relationship between diet & gut microbiome.

Static and dynamic in vitro colonic models reveal the spatiotemporal production of flavan-3-ol catabolites
Flavan-3-ols are the most found flavonoid compounds in the human diet. Polymeric and monomeric flavan-3-ols reach the colonic region intact, where the…

Excited to share our publication in Microbiome! 🦠🔬 Our research highlights how apple pectin enriches gut bacteria in obesity, boosting beneficial metabolites like indole propionic acid. Grateful to my collaborators 🤝#GutHealth #Microbiome #nutrition #obesity
Tailored impact of dietary fibers on gut microbiota: a multi-omics comparison on the lean and obese microbial communities - Microbiome
Background Previous studies have shown that microbial communities differ in obese and lean individuals, and dietary fiber can help reduce obesity-related conditions through diet-gut microbiota interac...
