Apart from baking day all of our bread comes out of the freezer. Less carb spike. I slice and freeze it in batches.

Ooft! I moved my desk to a back wall at work so no one was behind me, together with the headphones I became a much less angry supervisor and far more productive.

It’s for the aeroplane more than anything. I had some for work due to misophonia but they have packed up long since.

Yes. 50g bread flour, 50g tepid filtered water (no chorine) in a tall clean jar, muslin over the top. Leave in warm room
Day 2 discard half and do as above. Do this for about 5 days. It should start to produce bubbles.
Either refrigerate and feed weekly or use regularly. Discard-pancakes etc

Sourdough is baking, chicken is prepped, veg peeled, aubergine ready to roast for babagnoush, apple crumble at the ready and a quiche for tomorrow is lined up. Faithless playing in the background and coffee in hand. This is a good day. I may have had 7 hours sleep last night.
