Good morning, skyfolk! This is my Neatloaf. Impossible & red lentil base, miso mushroom gravy, and roasted garlic mashed potatoes. I call this the "omnivore pleaser" on my catering menu. 🤣

Throwback to a simpler time (2019), when I ran the Pannito Pop Up at Walden (pannito = panini meets burrito). This one was the Pequod, a pizza-vibe delight with herbed Impossible sausage, creamed spinach, sauteed mushrooms, vegan mozz, and tomato basil sauce.
