Had some absolute units of chicken breasts last night. Pounded em flat and pan fried before smothering with cheese under the broiler. Set that atop some simple and tasty red sauce and pasta. Exactly what we needed!

What's the best way to test out homemade hot sauces? Why its frying up a bunch of chicken and tots to give em a proper go. The Green is a champagne hot chili, the yellow is a scotch bonnet pineapple, and the red is a jalapeno, sweet chili garlic!

Went for something that had a lot more punch than expected. An adobo marinated pork tenderloin, roasted with rice, steamed broccoli and an off the cuff cucumber and tomato vinegar salad. Absolutely delicious and really hit the spot!
